Tofu Benedict with Coconut Bacon

A vibrant plant-based twist on a classic brunch favorite. This wholesome Benedict layers savory tofu, creamy avocado, fresh greens, juicy tomato, and smoky coconut bacon, all drizzled with a silky vegan hollandaise—for a nourishing start to your day.

Ingredients:

For the Tofu “Egg”:

  • 1 block (16 oz) firm tofu, drained and sliced into 4 thick rounds or squares

  • 4 Tbsp olive oil

  • 1/2 tsp turmeric

  • 1/2 tsp garlic powder

  • 1/4 tsp black salt

  • 1/2 tsp black pepper

  • 1 Tbsp tamari or soy sauce

For the Coconut Bacon:

  • 1 cup large unsweetened coconut flakes

  • 1 tbsp tamari

  • 1 tbsp maple syrup

  • 1/2 tsp liquid smoke or smoked paprika

  • 1 tsp olive oil

For the Vegan Hollandaise:

  • 1/2 cup raw cashews (soaked in hot water for 30 min) or 1/2 cup canned coconut milk

  • 2 Tbsp nutritional yeast

  • 2 Tbsp lemon juice

  • 1 tsp Dijon mustard

  • 1/4 tsp turmeric

  • 1/2 tsp garlic powder

  • 1/4–1/2 cup warm water (to thin)

  • Salt to taste

For Assembly:

  • 2 whole grain or sprouted English muffins, halved and toasted

  • 1 ripe avocado, sliced

  • 1 medium tomato, sliced

  • 1 cup fresh greens (baby arugula, spinach, or microgreens)

  • Chives as optional garnish

Instructions:

1. Prepare Coconut Bacon

  • Preheat oven to 325°F.

  • Mix coconut flakes with tamari, maple syrup, liquid smoke, and oil in a bowl.

  • Spread on a parchment-lined tray and bake 10–15 minutes, stirring halfway. Let cool to crisp.

2. Pan-Fry the Tofu

  • Create marinade with the turmeric, garlic powder, black salt, black pepper, tamari and 2 Tbsp olive oil.

  • Heat 2 Tbsp olive oil in a skillet on high heat. Add tofu slices. Pour marinade over top.

  • Cook 4–5 minutes per side until golden and lightly crisp. Set aside.

    *Tofu can also be marinated and prepared in an air fryer at 400°F for 5-10 min per side.

3. Make Vegan Hollandaise

  • Blend all sauce ingredients until smooth and creamy. Warm gently in a saucepan if desired. Add water for a pourable texture.

4. Assemble the Benedict

  • On each toasted English muffin half, layer:

    • A handful of fresh greens

    • 2-3 slices of avocado

    • A slice of tomato

    • A tofu round (or square)

    • Drizzle generously with vegan hollandaise

    • Top with coconut bacon and fresh chives. Enjoy!
