Papaya Zen Bowl
Bright, refreshing, and naturally sweet, this papaya bowl is a tropical twist on the classic breakfast parfait. Juicy ripe papaya halves are filled with creamy vegan yogurt and topped with crunchy granola, fresh berries, banana slices, coconut flakes, and a generous drizzle of nut butter. It’s a nourishing, no-fuss meal that’s as beautiful as it is satisfying—perfect for a vibrant start to your day or a cooling afternoon snack.

Ingredients:
- 1 ripe papaya (cut in half and de-seeded) 
- 1 cup vegan yogurt (no added sugar) - 1/2 cup per half 
- 1/2 cup granola - 1/4 cup granola per half 
- 1/2 cup blueberries - 1/4 cup per half 
- 1/2 cup strawberries (quartered) - 1/4 cup per half 
- 1 banana (sliced) - 1/2 banana per half 
- 4 Tbsp coconut flakes - 2 Tbsp per half 
- 4 Tbsp nut butter - 2 Tbsp per half 
Instructions:
- Cut the papaya in half and scrap all the seeds out of the center. 
- With a spoon, layer the yogurt in the center of the papaya and even out with the back of the spoon. 
- Add the granola on top to fill the papaya bowl. 
- Place the blueberries, strawberries and sliced banana on top. 
- Sprinkle the coconut flask over top and finish with nut butter. Enjoy!
